Banoffee pie brings together biscuit crumb, soft caramel, ripe banana and whipped cream in one gloriously indulgent dessert. It is sweet, comforting and always a crowd-pleaser at the table.

Serves: 8 people

Ingredients

  • Biscuits – 200 g
  • Speculaas biscuits – 130 g
  • Butter – 150 g
  • Condensed milk – 1 can
  • Bananas – 4
  • Whipping cream – 500 ml
  • Vanilla – 1 pod
  • Dark chocolate – 50 g
  • Salt – pinch

Method

Crush the biscuits and speculaas and mix with melted butter. Press into a tart tin and chill until firm.
Simmer the unopened can of condensed milk in water for about 2 hours, then cool completely before opening to make caramel, or use ready-made dulce de leche.
Spread the caramel over the chilled crust.
Slice the bananas and arrange them generously over the caramel layer.
Whip the cream with the vanilla until softly firm and spoon it over the bananas.
Finish with grated dark chocolate and a tiny pinch of salt.
