Sweet banana fritters are not essential on every rice table, but as a warm finishing bite they are impossible to resist.

Ingredients
- Firm ripe bananas – 4
- Flour – 150 g
- Rice flour – 50 g
- Sugar – 1 tbsp
- Baking powder – 1 tsp
- Water – 180 ml
- Oil – for frying
Method
Cut the bananas in halves or thirds lengthwise.
Whisk the flour, rice flour, sugar, baking powder and water into a smooth batter.
Dip the banana pieces in the batter and fry them in hot oil until golden and crisp.
Drain briefly and serve warm as a sweet finish.
