Sweet figs, molten mozzarella and crisp bacon create a warm starter that balances salty, creamy and fruity flavours in one bite.
Serves: 4 people

Ingredients
- Fresh figs – 8
- Mozzarella – 125 g
- Thin bacon slices – 8
- Balsamic vinegar – 1 tbsp
- Honey – 1 tsp
- Black pepper – to taste
- Rocket – a handful
Method
1. Cut the figs crosswise without slicing all the way through and add a small drizzle of balsamic into each one.
2. Tuck a piece of mozzarella into every fig and wrap each fruit with a slice of bacon.
3. Bake until the bacon is crisp and the cheese softens into the centre.
4. Finish with a tiny drizzle of honey and serve on a little bed of rocket for freshness.
