Bagels and Lox Deviled Eggs

Cream cheese, smoked salmon and scallion make these eggs feel like a bagel-and-lox platter shrunk into one polished bite.

Serves: 6 people

Preparation time: 25 min

Ingredients

  • Eggs – 6 large
  • Cream cheese – 60 g, softened
  • Mayonnaise – 2 tbsp
  • Dijon mustard – 1 tsp
  • Spring onion – 2 tbsp, thinly sliced
  • Smoked salmon – 70 g, finely chopped
  • Black pepper – to taste
  • Bagel chips – a few, crushed for garnish

Method

STEP 1
Let the cream cheese soften first so it blends properly with the yolks rather than staying lumpy. Mash the yolks and cream cheese together before adding the mayonnaise and mustard.
STEP 2
Stir in the spring onion and chopped smoked salmon and season with black pepper. The filling should taste rich, creamy and slightly briny.
STEP 3
Fill the egg whites and top with a little extra salmon and a few crushed bagel chips for crunch right before serving.
