Crunchy bacon, sharp cheddar and mustard turn these deviled eggs into a richer, more savoury version that feels right at home on a brunch board or party platter.

Ingredients
- Eggs – 6 large
- Bacon – 3 slices
- Mayonnaise – 3 tbsp
- Sharp Cheddar – 30 g, finely grated
- Yellow mustard – 2 tsp
- Paprika – 1 pinch
- Salt – to taste
- Black pepper – to taste
Method
STEP 1
Cook the bacon until crisp, then let it drain on kitchen paper. Once it has cooled, chop most of it finely and keep a little aside for garnish.
STEP 2
Peel the hard-boiled eggs, halve them and remove the yolks. Mash the yolks with mayonnaise, mustard and cheddar until the mixture is creamy but still thick enough to hold its shape.
STEP 3
Fold in the chopped bacon, season with pepper and only a little salt, then fill the egg whites. Scatter the reserved bacon over the top and finish with a pinch of paprika.
