Babi Ketjap is a dutch-indies side dish that immediately gives a meal more character. Pork in a glossy sweet soy sauce with onion and garlic, simple, sticky and full of flavour. It is especially useful with rice, noodles, grilled dishes or a small rice-table style spread.

Babi Ketjap is best used to give a meal more contrast. With rice, noodles, grilled food or a Dutch-Indies style spread, it can add freshness, heat, creaminess or a nutty layer. Start with a small serving, because side dishes like this should lift the rest of the plate without taking over completely.

Ingredients
- Pork shoulder or neck – 800 g
- Onions – 2
- Garlic cloves – 3
- Sweet soy sauce – 6 tbsp
- Soy sauce – 1 tbsp
- Water – 200 ml
- Ginger – 2 cm
- Oil – 2 tbsp
Method
STEP 1
Brown the pork in a wide pan.
STEP 2
Add onion, garlic and ginger and cook briefly.
STEP 3
Add sweet soy, soy sauce and water.
STEP 4
Simmer until the meat is tender and the sauce thickens.
STEP 5
Serve hot with rice and pickles.
