What is Ayam Betutu?
Ayam Betutu is not a standard everyday dish in many Western kitchens, which is exactly why it is interesting. At its core, it is balinese spiced chicken roasted or braised until tender, intensely aromatic and full of warmth. The key is balance: savoury, aromatic, fresh and sometimes sweet or spicy. Serve it with rice, noodles, vegetables or a crisp cucumber side so the flavours can stand out clearly.

Ingredients
- Whole chicken or chicken pieces – 1.2 kg
- Shallots – 6
- Garlic cloves – 5
- Fresh turmeric – 3 cm
- Ginger – 3 cm
- Candlenuts – 4
- Lemongrass – 1 stalk
- Coriander – 1 tsp
- Oil – 2 tbsp
- Salt – to taste
Method
STEP 1
Blend shallots, garlic, turmeric, ginger, candlenuts and coriander into a spice paste.
STEP 2
Rub the chicken all over with the paste and season with salt.
STEP 3
Place the chicken in a covered pan or roasting dish with lemongrass and a splash of water.
STEP 4
Roast or braise gently until very tender.
STEP 5
Serve with rice and sambal.
