Avocado toast may be simple, but when it is made well it feels generous, fresh and satisfying. Good bread, ripe avocado and a little seasoning are enough to create a breakfast or lunch people genuinely look forward to.

Serves: 2 people

Preparation time: 15 min

Ingredients

  • Sourdough bread – 2 thick slices
  • Ripe avocado – 1 large
  • Lemon or lime juice – 1 tbsp
  • Olive oil – 1 tsp
  • Chilli flakes – 1 pinch
  • Salt and black pepper – to taste

Method

STEP 1
Toast the bread until the outside is crisp but the centre still has some softness.
STEP 2
Mash the avocado with the lemon or lime juice, olive oil, chilli flakes, salt and pepper.
STEP 3
Spread the avocado thickly over the warm toast so it sinks slightly into the bread.
STEP 4
Serve at once as it is, or finish with extra chilli, seeds or a squeeze of citrus.
