Avocado makes the filling extra buttery and soft, while lime, garlic and a touch of heat keep these eggs bright enough to stay snacky rather than heavy.

Ingredients
- Eggs – 6 large
- Avocado – 1 ripe
- Mayonnaise – 2 tbsp
- Lime juice – 2 tsp
- Garlic – 1 small clove, crushed
- Cayenne pepper – 1 pinch
- Bacon – 2 slices, crisp and chopped
- Jalapeño – a few thin slices, optional
- Salt – to taste
Method
STEP 1
Halve the eggs and put the yolks in a bowl. Mash them first on their own so no lumps remain, then add the avocado flesh and mash again until smooth.
STEP 2
Stir in the mayonnaise, lime juice, garlic and cayenne. The mixture should become pale green and fluffy. Fold in most of the bacon at the end so it keeps a little texture.
STEP 3
Fill the whites straight away because avocado darkens if it stands too long. Garnish with the remaining bacon and, if you like, a thin jalapeño slice on each half.
