This silky soup walks the line between comfort and freshness, with avocado and lettuce forming the base and king prawns bringing a luxurious finish.

Ingredients
- Avocados – 2
- Lettuce leaves – 1 small head
- Onion – 1
- Garlic – 1 clove
- Stock – 800 ml
- Crème fraîche – 100 ml
- King prawns – 8 to 12
- Olive oil – 2 tbsp
- Lime or lemon juice – 1 tbsp
- Salt and black pepper – to taste
Method
1. Soften the onion and garlic in olive oil, then add the lettuce and let it wilt briefly.
2. Pour in the stock and simmer for a few minutes, then blend with the avocado and crème fraîche until smooth.
3. Season with citrus juice, salt and pepper until the soup tastes bright rather than heavy.
4. Fry the king prawns quickly in a hot pan and serve them on top of the soup just before it goes to the table.
