This home-style Turkish doner uses seasoned lamb, baked until firm and then sliced thin for serving in pita or flatbread. It is one of those recipes that feels especially rewarding because the texture really changes once you crisp the slices in the pan.

Ingredients

  • Ground lamb – 700 g
  • Onion, finely grated – 1
  • Garlic, minced – 3 cloves
  • Plain yogurt – 2 tbsp
  • Ground cumin – 1 tsp
  • Ground coriander – 1 tsp
  • Dried oregano – 1 tsp
  • Paprika – 1 tsp
  • Pita breads or flatbreads – 8
  • Cabbage, carrot and cucumber – for serving
  • Chilli sauce – to taste

Method

1. Mix the lamb with onion, garlic, yogurt, cumin, coriander, oregano, paprika, salt and pepper until the seasoning is evenly distributed.
2. Press the mixture into a loaf tin or shape it into a compact roll. Bake until firm and fully cooked.
3. Cool just enough to handle, then slice the meat as thinly as possible.
4. Fry the slices in a hot pan until the edges darken and crisp. This makes a big difference to both flavour and texture.
5. Serve in warm pita bread with crunchy salad and a little chilli sauce.
