Wild garlic soup is a fresh Austrian spring soup with a gentle garlic note. It is creamy, vividly green and quick to make.

Ingredients
- butter – 2 tbsp
- small onion, finely chopped – 1
- potato, diced – 5 oz
- vegetable stock – 4 cups
- fresh wild garlic, roughly chopped – 3 oz
- heavy cream – 2/3 cup
- lemon juice – 1 tsp
- salt – 1 tsp
- white pepper – 1/4 tsp
Method
1. Melt the butter and cook the onion for 3 minutes. Add the potato and pour in the stock.
2. Simmer for 12 minutes until the potato is tender.
3. Add the wild garlic and blend the soup immediately so the green color stays bright.
4. Stir in the cream and lemon juice and warm through for 1 minute.
5. Season with salt and white pepper and serve at once.
