Grießnockerl soup is a gentle broth soup with fluffy semolina dumplings. The dumplings have a delicate texture and soak up a lot of flavor from the broth.
Serves: 4 people
Preparation time: 25 min
Ingredients
- soft butter – 3 tbsp
- egg – 1
- semolina – 1/2 cup
- salt – 1/2 tsp
- nutmeg – 1 pinch
- vegetable stock – 5 cups
- parsley, chopped – 2 tbsp
Method
1. Beat the butter until creamy and mix in the egg. Add the semolina, salt and nutmeg and let the mixture rest for 10 minutes.
2. Heat the stock until it is just barely simmering.
3. Shape small oval dumplings with two spoons and slip them into the stock.
4. Cook the dumplings very gently for 12 minutes until they are light and float to the surface.
5. Serve the soup with parsley over the top.
