Arugula and Goat Cheese Salad with Fig Vinaigrette

Elegant salad with arugula, goat cheese and fig vinaigrette, adapted into a Dutch-friendly recipe.

Serves: 4 people

Preparation time: 25 min

Ingredients

  • Arugula – 120 g
  • Goat cheese – 120 g
  • Fresh figs – 4
  • Walnuts – 50 g
  • Olive oil – 4 tbsp
  • Balsamic vinegar – 2 tbsp
  • Fig jam – 1 tbsp
  • Dijon mustard – 1 tsp
  • Salt – to taste
  • Black pepper – to taste

Method

STEP 1
Toast the walnuts lightly and quarter the figs.
STEP 2
Whisk olive oil, balsamic, fig jam and mustard into a thick vinaigrette.
STEP 3
Arrange arugula on a platter, add figs and goat cheese, scatter over the walnuts and spoon over the vinaigrette.
