Arroz con pollo brings chicken, rice and vegetables together in a simple but flavourful meal where the rice absorbs the seasoning.
What is arroz con pollo?
Arroz con pollo literally means rice with chicken. The dish appears in many Latin American kitchens and is built around rice cooked with chicken and seasonings until everything becomes one hearty meal.

Ingredients
- long-grain rice – 1 1/2 cups
- chicken thighs – 1 1/2 lb
- onion, chopped – 1 large
- red bell pepper, chopped – 1
- garlic, minced – 3 cloves
- peas – 1 cup
- tomato paste – 2 tbsp
- chicken stock – 3 cups
- ground cumin – 1 tsp
- turmeric – 1 tsp
- olive oil – 2 tbsp
- salt – 1 tsp
- black pepper – 1/2 tsp
- cilantro, chopped – 2 tbsp
Method
1. Season the chicken with salt and pepper and brown it in the oil.
2. Add onion, pepper and garlic and cook until fragrant.
3. Stir in tomato paste, cumin, turmeric and rice.
4. Pour in the stock, cover and simmer until the rice and chicken are cooked through.
5. Fold in the peas and cilantro just before serving.
