A country-style pork liver pâté baked in a loaf tin and served cold.

Serves: 8 people

Preparation time: 780 min

Ingredients

  • pork shoulder – 1 lb
  • pork liver – 7 oz
  • smoked bacon – 4 oz
  • shallots – 2
  • garlic – 2 cloves
  • egg – 1
  • breadcrumbs – 1/2 cup
  • parsley – 2 tbsp, chopped
  • thyme – 1 tsp
  • nutmeg – 1 pinch
  • salt – to taste
  • black pepper – to taste

Method

1. Mince the pork shoulder, liver and bacon or pulse them in a food processor.
2. Mix in the shallots, garlic, egg, breadcrumbs, parsley, thyme, nutmeg, salt and pepper.
3. Pack the mixture into a lined loaf tin.
4. Bake at 170°C for 55 to 60 minutes until just firm.
5. Cool completely, then chill overnight for the best texture.
6. Slice and serve with bread and pickles.
