An easy traybake of cod, carrots and potatoes that delivers clean northern flavors with very little fuss.

Ingredients
- Cod fillet – 600 g
- Potatoes – 600 g
- Carrots – 3
- Red onion – 1
- Oil – 3 tbsp
- Dill – 1 handful
- Lemon – 1
- Salt – to taste
- Black pepper – to taste
Method
Heat the oven to 200°C.
Cut the potatoes, carrots and onion into even pieces and toss them with most of the oil, salt and pepper. Roast them for 25 minutes.
Add the cod to the tray, drizzle with the remaining oil and roast for another 10 to 12 minutes until the fish is cooked.
Scatter over chopped dill and squeeze lemon over everything.
Serve straight from the tray while hot.
