A hearty cold salad with flaky fish, chewy barley and herbs: fresh enough for lunch, substantial enough for dinner.
Serves: 4 people

Ingredients
- Arctic char fillet – 400 g
- Pearl barley – 180 g
- Cucumber – 1/2
- Red onion – 1/2
- Dill – 1 handful
- Lemon juice – 2 tbsp
- Olive oil – 3 tbsp
- Salt – to taste
- Black pepper – to taste
Method
Cook the barley until tender, drain it well and let it cool.
Cook the fish gently, then flake it into large pieces.
Dice the cucumber and slice the onion very thinly.
Whisk the lemon juice with the olive oil, salt and pepper.
Combine the barley, fish, cucumber, onion and dill, then toss with the dressing just before serving.
