Earthy acorn meal thickens this Apache-style soup into something rustic, unusual and deeply autumnal.

Ingredients
- Stewing beef, cubed – 500 g
- Water – 1.5 l
- Salt – 1 tsp
- Black pepper – 1/2 tsp
- Food-grade leached acorn meal – 120 g
Method
Put the beef and water in a pot and bring it to a simmer.
Cook gently until the beef is tender, about 1 1/2 to 2 hours.
Lift the meat out, chop it smaller if needed and return it to the broth.
Season with salt and pepper.
Whisk in the leached acorn meal little by little so no lumps form.
Cook for 10 more minutes until the soup thickens and serve hot.
