Amish-Style Potato Salad

A sweeter, richer potato salad with eggy dressing, celery and a touch of sugar.

Serves: 6 people

Preparation time: 25 min

Ingredients

  • Potatoes – 1.2 kg
  • Eggs – 5
  • Mayonnaise – 200 ml
  • Salad cream – 60 ml
  • Yellow mustard – 2 tbsp
  • Sugar – 2 tbsp
  • Celery – 2 stalks
  • Onion – 1/2
  • Sweet pickles – 3
  • Paprika – 1 tsp
  • Salt – to taste
  • Black pepper – to taste

Method

STEP 1
Cook the potatoes until tender and let them cool.
STEP 2
Mash 2 of the hard-boiled eggs into the mayonnaise, salad cream, mustard and sugar.
STEP 3
Add celery, onion and chopped sweet pickles.
STEP 4
Fold in the potatoes and remaining chopped eggs. Dust lightly with paprika and chill.
