Ajam Smoor is a familiar Dutch-Indies chicken dish with homely flavours. Chicken slowly braised in sweet soy, onion and warm spices, soft, glossy and deeply comforting. It works well for an everyday meal, but also as part of a larger rice-table style spread.

Why is Ajam Smoor so popular?

The strength of Ajam Smoor is the combination of familiar ingredients and warm Dutch-Indies flavours. It does not need to be complicated to taste rich and satisfying. Pay attention to the balance between salty, sweet, aromatic and fresh, and add something crisp or tangy on the side when the sauce or base is fuller.

Ingredients

  • Chicken thighs – 1 kg
  • Onions – 2
  • Garlic cloves – 3
  • Sweet soy sauce – 5 tbsp
  • Tomato purée – 1 tbsp
  • Water or stock – 250 ml
  • Nutmeg – pinch
  • Cloves – 2
  • Oil – 2 tbsp

Method

STEP 1
Brown the chicken in a pan and set aside.

STEP 2
Fry onion and garlic until soft. Add tomato purée, sweet soy, nutmeg and cloves.

STEP 3
Return the chicken and pour in the liquid.

STEP 4
Simmer gently for 35 to 45 minutes until the sauce is glossy and the chicken tender.

STEP 5
Serve with rice.
