Air fryer stuffed portobellos with spinach and feta

Large portobellos filled with spinach and feta make a quick vegetarian main or side dish.

Why stuff portobello mushrooms?

Portobellos are large and firm enough to hold a filling. Spinach and feta bring a savoury Mediterranean flavour. In the air fryer, the mushrooms cook quickly without drying out.

Ingredients

  • portobello mushrooms – 4 large
  • spinach – 3 cups, chopped
  • feta – 4 oz, crumbled
  • olive oil – 1 tbsp
  • garlic – 1 clove, minced
  • salt – to taste
  • black pepper – to taste

Method

STEP 1
Mix the spinach with the feta, olive oil, garlic, salt and black pepper.
STEP 2
Fill the portobello caps with the mixture.
STEP 3
Air fry at 360°F for 10 to 12 minutes until the mushrooms are tender and the filling is hot.
