Golden halloumi with colorful vegetables makes a bright, hearty air fryer dinner or side.

Why cook halloumi in the air fryer?

Halloumi is firm and does not melt away, which makes it ideal for skewers. In the air fryer it turns golden outside and warm inside. Vegetables make the skewers fresh and colourful.

Ingredients

  • halloumi – 8 oz, cubed
  • zucchini – 1, thick slices
  • red onion – 1, wedges
  • red bell pepper – 1, chunks
  • olive oil – 2 tbsp
  • dried oregano – 1 tsp
  • salt – to taste
  • black pepper – to taste

Method

STEP 1
Thread the halloumi and vegetables onto the skewers.
STEP 2
Brush with olive oil and season with oregano, salt and black pepper.
STEP 3
Air fry at 390°F for 10 to 12 minutes, turning once, until the halloumi is golden and the vegetables are tender.
