Creamy risotto balls with a melted mozzarella center get crisp and golden in the air fryer.
What are arancini?
Arancini are Italian risotto balls that are usually filled and fried until crisp. In this version, mozzarella melts in the centre. The air fryer browns the outside without deep-frying.

Ingredients
- cold risotto – 3 cups
- mozzarella – 4 oz, cubed
- egg – 1, beaten
- breadcrumbs – 1 cup
- olive oil spray – as needed
Method
STEP 1
Take a spoonful of risotto, place a cube of mozzarella in the center and shape into a ball.
STEP 2
Dip each ball in beaten egg and coat with breadcrumbs.
STEP 3
Spray lightly with oil and air fry at 390°F for 10 to 12 minutes until crisp and golden.
