Raw artichoke slices with lettuce, tomato, cucumber, spring onion and olives make this an elegant Greek salad with plenty of bite and lemony freshness.

Serves: 4 people

Preparation time: 25 min

Ingredients

  • Fresh artichokes – 2
  • Lettuce – a handful
  • Tomato – to taste
  • Cucumber – to taste
  • Spring onions – to taste
  • Greek olives – a handful
  • Lemon juice – to taste
  • Extra virgin olive oil – to taste
  • Salt – to taste

Method

Trim the artichokes down to the tender leaves, heart and stem, then slice them very thinly and toss at once with lemon juice so they do not discolor. Put the lettuce, tomato, cucumber and spring onions into a salad bowl and season lightly with salt. Add the artichoke slices and olives, drizzle with olive oil and a little extra lemon juice and toss just enough to combine.
