A dark, spiced pie from Aalst made with bread, gingerbread and syrup.
Serves: 8 people
Preparation time: 40 min
Ingredients
- bread, stale – 7 oz
- gingerbread – 7 oz
- whole milk – 3 cups
- brown sugar – 1/2 cup
- dark syrup – 3 tbsp
- eggs – 2
- cinnamon – 1 tsp
- nutmeg – 1/2 tsp
- butter – 1 tbsp
- pie crust – 1 sheet
Method
1. Warm the milk and soak the bread and gingerbread in it until very soft.
2. Mash or blend the mixture, then stir in the sugar, syrup, eggs, cinnamon and nutmeg.
3. Line a tart tin with the pastry and butter the edges lightly.
4. Pour in the filling and smooth the top.
5. Bake at 190°C for 35 to 40 minutes until set and dark golden.
6. Cool before slicing.
