Chicken, pasta and a creamy tomato-based sauce come together in a single speedy midweek dish.

Ingredients
- pasta – 200 g
- chicken breast – 2
- olive oil – 1 tbsp
- garlic – 2 cloves
- crème fraîche – 100 g
- tomato purée – 1 tbsp
- parmesan – 30 g
- basil – 1 handful
- salt – to taste
- black pepper – to taste
Method
STEP 1
Cook the pasta in a large pan of salted boiling water until just tender.
STEP 2
Slice the chicken into bite-sized strips, season lightly and fry in the olive oil until golden and cooked through.
STEP 3
Add the garlic and tomato purée and cook for half a minute so the purée loses its raw edge.
STEP 4
Stir in the crème fraîche and a splash of pasta water to make a glossy sauce.
STEP 5
Drain the pasta and fold it into the pan with most of the parmesan.
STEP 6
Finish with basil, the remaining parmesan and black pepper.
